Real seafood takes a local touch
Friday, February 6, 2009 at 17:53 I really wanted to cook some fabulous Florida gulf coast fish for dinner tonight, but after having taken a look in the local supermarkets recommended by my sister-in-law, I was about to give up in despair of finding anything.
Having grown up in south Florida, raised by a Dad/ fishing guide, we ate the freshest of the catch on an almost daily basis. I know what fresh fish smells like ( clean, and a bit like the breeze across the ocean ), and what fresh fish feels and looks like ( not slimy, having a nice moist glisten with good color and texture). The butcher at the local market did the right thing. He was not a local - from New Jersey, not Florida. He told me to go to one of several local fish markets. ( I figured that the right thing to do was to let the man sell me some lamb loin chops cut to my specifications ).
Randy’s Paradise Shrimp Co. is one of those places that really deserve to succeed. Which may not be easy in a failing economy. I hope they make it.
