Preparing eggplant

I’ve got some japanese and thai eggplant in the refrigerator that I planned to combine with some other delectable veggies and some Indian ‘korma’simmering sauce - accompanied by brown rice. So it occurred to me that not everybody may know how to prepare this chameleon, go with everything vegetable.
